Hello again! So as promised in my previous post, I would share some useful recipes to help beat those sugary cravings and I thought you might like this one! I stole this recipe from Deliciously Ella’s blog, which is amazing for healthy recipes and snacks. Its my go to reference when I fancy making something a bit out of the ordinary. Her lifestyle is so inspiring I always go away feeling motivated after having a good read.
This is a gluten free banana loaf recipe. Still sweet but yet clean and healthy at the same time. I enjoy making these kinds of treats when I have the time and saving them for work lunches or late evening snacks.
5 over ripe bananas
I cup ground almonds
2 cups grounds pecan nuts
1 cup brown rice flour or buckwheat flour
1/2 cup of maple syrup
3 tablespoons of chia seeds
2 tablespoons of cinnamon
Start by pre-heating the oven to 145C. Then blend the almonds and pecans in a food processor so that they form a flour, this should take about thirty seconds. Once it’s smooth remove the flour and add it to a mixing bowl with the buckwheat flour, maple syrup, chia seeds and cinnamon, mixing them all together.
Next mash the bananas together until smooth before stirring them into the bread mix, at this point the mixture should be really nice and sticky.
Grease a loaf tin with coconut oil and then pour in the mix and allow it to bake for about an hour.
